Peach Cobbler



I can't get enough for this, so yummy!! After I finished baking it, I can’t wait to eat it; half of the peach cobber went into my stomach as soon as it came out of the oven. Using fresh peaches is so much better than can because it isn’t mushy and too sweet.

Ingredients:
3 pound (about 8 medium) peaches, peeled and sliced
2 cups sugar, divided
1 teaspoon ground cinnamon

3 tablespoons lemon juice
1/2 teaspoon salt, divided
1 stick (1/2 cup) butter
1 1/2 cups self-rising flour (or 1 1/2 cups all-purpose-flour, mix with 2 teaspoons of baking powder and 1/4 teaspoon of salt)

1 1/2 cups milk

Directions:
1. Preheat oven to 350 degrees F.

2. In a large bowl, mix the sliced peaches, 1 cup of sugar, 1/4 teaspoon salt, lemon juice and cinnamon together; set aside.
 


3. Put the butter in a 9x13 inch baking dish and place in oven to melt.


4. Mix remaining 1 cup sugar, flour, 1/4 teaspoon salt and milk slowly to prevent clumping.


Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Batter will rise to top during baking.


Bake in preheated oven for 1 hour or until crust is golden browned.  Serve with your choice of whipped cream or vanilla ice cream. Yum!
