Buttermilk Cornbread

 
 
It’s the best cornbread, sweet and moist!

Ingredients:
1/2 cup butter
2/3 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
1 can (8 ounce) whole kernel corn, drained


 
For Jalapeno and Cheese Version:
Add..
1 cup shredded sharp cheddar cheese
3 tablespoons seeded and minced fresh jalapeno peppers


Directions:
1. Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.

2. Melt butter in the microwave, stir in sugar. Add eggs and whisk until blended. Add baking soda and buttermilk and whisk again. Add cornmeal, flour, and salt; stir with spatula. Add corn and mix well. Pour it into a greased baking pan.

3. Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted in the center comes out clean.


Serve with Collard Green, Yummy!!
