Pattaya Sun-set


For a pitcher:
1 (46 ounce) can pineapple juice
1 cup Sala Syrup
1/2 cup fresh lime juice
Whiskey, optional

For 1 serving:
2 ounce pineapple juice
1 tablespoon fresh lime juice
1 ounce whiskey, optional
1 ounce Sala syrup


Directions:
Mix all ingredients together. Serve over crush ice.

Freckle Lemonade


Ingredients:
1 cup sugar
1 cup water
1 cup strawberries, sliced
1 cup fresh lemon juice (about 6)
4 cups cold water
Ice
Lemon sliced for garnish (optional)

Directions:
1. In a medium saucepan, bring the water and sugar to a boil. Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Let cool completely.

2. In a pitcher pour lemon juice onto the strawberries slices, let stand for 5 minutes or until strawberry juice has come out. Add syrup and 4 cups of cold water to the strawberries mixture, stir together. Serve over ice, garnished with lemon slices.


Tips: Before squeezing juice from the lemons, roll them on the countertop, applying gentle pressure with the heel of your palm. This will really get the lemons’ juices flowing and make it easier to squeeze them.

Peppermint White Chocolate Cocoa


Make: approximately 2 quarts

Ingredients:
4 cups half-and-half or milk
8 (1-ounce) squares white baking chocolate, chopped
1 cup crushed peppermint candies (approximately 30 candies)
1 cup peppermint baking chips
1 cup heavy cream
1/4 cup confectioners’ sugar
Garnish: whipped cream and peppermint sticks

Directions:
1. In a large saucepan, bring half-and-half to a simmer over medium heat. Reduce heat to medium-low. Add chocolate, candies, and baking chips. Continue to cook, whisking constantly, until smooth and creamy. Remove from heat.

2. Meanwhile, in a mixing bowl, beat cream and confectioner’s sugar on medium speed with an electric mixer until medium peaks form. To serve, place 1/4 cup whipped cream in each mug. Add hot peppermint mixture to each mug, leaving enough room for garnish, if desired. Serve immediately. Garnish with remaining whipped cream and peppermint sticks, if desired.


Brazilian Lemonade


Brazilian lemons look and taste more like common limes, so this lemonade recipe does not call for lemons. Best served immediately as it becomes bitter tasting when made ahead of time.

Ingredients:
2 fresh limes, washed thoroughly
3 cups water
1/2 cup sugar
3 tablespoons sweetened condensed milk
Ice


Directions:
Cut off the ends and slice into 8 wedges. Place limes, water, sugar, sweetened condensed milk and ice in blender. Cover; blend for 20 seconds. (Blending longer will cause drink to become bitter.) Strain through a fine mesh strainer into pitcher to remove rinds. Best served immediately over ice cubes or crushed ice.
